Cowbell's Craft Beer and Cheese Soup Recipe

On a cold winter day, there’s nothing better than coming home to a crackling fireplace, a cozy knitted wool throw, homemade bread, and of course, a steaming hot bowl of soup.
But what kind of soup should we make? Soups take on all styles and textures, but on a cold day like this, we think a creamy, “stick-to-your-ribs” style of soup would be perfect. Beer and cheese soup is a popular dish in restaurants, but many don’t know how to make this delicious soup at home. We’ve come up with the perfect beer and cheese soup recipe, starring Cowbell’s Absent Landlord Country Kolsch. It is hearty enough for dinner – so grab a can and get ready to warm up with Cowbell’s Craft Beer and Cheese Soup!
1 diced large onion
3 chopped cloves of garlic
1 tbsp butter
1 tbsp olive oil
3 cubed large potatoes
3 cubed carrots
4 cups chicken stock
1 can Absent Landlord beer
3 bay leaves
1/2 tsp nutmeg
2 heaping cups of sharp cheddar cheese
1 cup 10% cream
1 tbsp Worcestershire sauce
Salt and pepper to taste
1 large dash of Tabasco to fight the winter cold
Directions:In a large soup pot, sauté the onion and garlic in the olive oil and butter until translucent.
- Add in the potatoes, carrots, chicken stock, Absent Landlord beer, bay leaves, nutmeg, salt and pepper.
- Simmer for 30 minutes until the vegetables are well cooked and soft.
- Remove the bay leaves.
- Allow to cool for 30 minutes then puree with a hand blender, food processor, or regular blender.
- Add in the cheese, cream, and Worcestershire sauce and reheat to combine.
- Add a dash of Tabasco to warm the soul.
Serve with toasted homemade bread or the biscuits of your choice.
As we serve up our steaming bowls, we can smell the wonderful aroma of beer and cheese. This creamy rich soup is sure to fill us up on a cold winter’s night. Rob takes his first sip and proclaims, “it’s a winner!” We both enjoy the scrumptious bowls of soup with toasted homemade bread. We’re full and satisfied.
